Easter Goodie Goodness
I would love to say I enjoy every aspect of Easter…so I’m going to say it…I enjoy every aspect of Easter! It’s not just the fact Easter usually falls into my birthday month, it is also the fact that this particular religious holiday gives me an excuse to give kids loads of pastel colored goodies. As an adult, I look forward to all that Easter Goodie Goodness too. From the Easter egg hunts to overloaded Easter baskets, what’s not to look forward to? Wait, don’t answer that… I can only imagine the clean up after a grand Easter egg hunt or after the kids take out all the filling to their Easter baskets. Yikes! Now that I think about it, let’s go for a treat that is a little less messy. I have recipe of an Easter Goodie Goodness in mind that I hope you all find to be as enjoyable as I have.
The Recipe is a Rice Kripsie Pop, well sort of…Here is what you will need:
3 tbsps. Of Butter
6 cups of Rice Krispies
4 cups of Marshmallows
1 cup of pastel colored M & M’s
24 popsicle sticks or lollipop sticks
Small cello bags
Balloon String or Pastel color twist tie
¼ measuring cup (grease with canola oil, vegetable oil, or non-stick cooking spray)
1 tsp. of butter to grease hands
First, melt butter in a large pan on low heat. Then, add Marshmallows, constantly stirring until all marshmallows are melted. Next, remove from heat, then add Rice Krispies and M & M’s mix until well incorporate with melted marshmallows. Use greased measure cup to scoop out concoction. With butter greased hands shape the concoction into a smooth ball, then sit on cookie sheet until cooled. Once all the rice krispy balls are formed and cooled, place stick into ball. Place them into the cello bag and tie.
Recipe yields approximately 24 Rice Krispie Pops.
