I thought I had the most fun making the Banana Pecan Cake with Cocoa Hazelnut Buttercream Icing, until this trifle topped that. I think it had alot to do with the “WOW” factor that it provoked from my family. As humble and modest as I am, I must admit that their responses made me feel proud of myself! When I sat the trifle down to take pictures of it, my husband responded with “What is that?!” (Honestly, I think I saw a little drool come out of his mouth after I told him what it was). My two youngest sons ate (I mean wolfed down) their trifle so fast I don’t think they chewed at all. All I know is…I sat the plates down in front of them and went into the kitchen to grab my trifle, by the time I left the kitchen with my trifle they both had empty plates. My niece took a fork full to her mouth, she leaned back on the porch post and slid down slightly as if she was going to faint responding with “Oh, my God this is soooo good!”. If I could describe the taste to you all, it would be soft, cool, slightly sweet banana dessert. When I think about this dessert with it’s composition, layers and taste, India Arie’s “In My Head” song comes to mind. The song starts off complex like my ingredients but then resolves into something melodious with simple layers of instrumental sounds. I think this dessert is perfect for a picnic or cookout. I hope you enjoy this dessert as much as my family did.
What you will need
Banana Cake (click here for recipe)
1 tsp banana extract
1 tsp vanilla extract
1/4 cup of sugar
2 cups of heavy cream or heavy whipping cream
Deep dish or trifle bowl
What to do
1. Prepare cake according to directions, change round pans to square pans (same sizes). Cut cakes into 5 to 6 strips (rows), then cut across strips 5 to 6 rows this should result into cake cubes.
2. Place heavy cream in mixer bowl. Add banana, vanilla extract and sugar. Whisk until stiff.
3. Now it’s time to build trifle.
4. First layer of trifle, layer cubes into bottom of dish. Peel and slice one banana over the layer of cake until covered. If not covered add and slice a half of another banana. Spoon in banana flavored whip cream, smooth out with a spatula. Repeat layering until reached the top of dish with the whip cream.
5. Cover trifle with plastic wrap and place into the refrigerator for about an hour before indulging.
